Sausage & Mozzarella Frittata..........Lou Pappa

 

Ingredients:
 
6 oz. sweet Italian sausage links, casings removed
2 yellow peppers, cut into 2" x 1/4" strips
1 large red onion, thinly sliced
1/2 c. water
8 large eggs
1/4 c. chopped fresh parsley
3/4 tsp. salt
1/4 tsp. ground black pepper
4 oz. shredded mozzarella cheese

Instructions:
 
Preheat oven to 350 degrees.
In a non-stick skillet, cook sausage over medium heat, breaking up sausage until well browned.
Put aside when done.
Add yellow pepper, onions and water to drippings in skillet and cook, stirring occasionally until peppers are tender and water has evaporated.
In a medium bowl, beat eggs, parsley, salt and pepper until well blended, stir in mozzarella and sausage.
Cook over medium heat until egg mixture begins to set  around the sides.
Place skillet in oven and bake until frittata is set, about 12 minutes.
