Pork Chops with Vinegar Peppers..........Peggy Will


 

Ingredients:
 
1 tbl. olive oil
4 pork rib chops - about 1 inch thick
salt
freshly ground black pepper
2 garlic cloves - lightly crushed
2 cups sliced mild cherry peppers with 2 tbl. of their juice
several hot pepperoncini  - if you like
 
 

Instructions:
 
Heat oil in large skillet over medium high heat.
Pat pork chops dry with paper towel sprinkle with salt and pepper.
When oil is very hot - add pork chops.
Cook the chops, turning once, for about 5 minutes on each side.
Lower heat to medium.
Scatter garlic around chops, cover pan, cook for 5 to 8 minutes.
Transfer the chops to a plate to keep warm.
Add peppers with their juice to pan and cook 1 to 2 minutes.
Spoon peppers over chops and serve.
